These pumpkin spice energy balls are an easy, no-bake snack made with pecans, dates, rolled oats, coconut and UMF™ mānuka honey. Naturally sweetened with dates and a touch of honey, they’re perfect for lunchboxes, afternoon snacks or a convenient bite on the go.
Ingredients
-
1 cup pecans (105 g)
-
½ cup unsweetened shredded coconut
-
¼ cup old-fashioned rolled oats
-
2 tsp pumpkin pie spice
-
¼ tsp fine sea salt
-
1 cup soft, pitted dates
-
2 tbsp UMF™ mānuka honey
-
2 tsp coconut oil
-
1–2 tsp water, as needed
Makes: 12 energy balls, or 6 servings of 2 energy balls.
Method
1. Blend the dry ingredients
Add the pecans, shredded coconut, rolled oats, pumpkin pie spice and sea salt to a food processor. Blend until the mixture resembles coarse crumbs.
2. Add the dates and honey
Add the pitted dates, UMF™ mānuka honey, coconut oil and 1 tsp of water. Process until finely chopped and the mixture starts to come together. Scrape down the sides of the bowl as needed.
3. Check the consistency
Press a small amount of the mixture between your fingers. It should hold together easily when squeezed and rolled into a ball. If it’s too crumbly, add another teaspoon of water and process again.
4. Roll into balls
Roll the mixture into 12 evenly sized balls. Leave them plain or add your preferred garnish.
5. Chill until firm
Place the energy balls in the refrigerator for at least 1 hour, or until firm. Enjoy chilled.
