Ingredients
For the chicken, salad and wraps
-
1 medium chicken breast (approximately 180–200 g)
-
1 tsp extra virgin olive oil
-
Pinch of salt and black pepper
-
1 cup rocket (arugula)
-
1 cup finely shredded red cabbage
-
½ small crisp, sweet red apple
-
4 slices sharp cheddar cheese
-
2 large wholegrain wraps
For the mānuka honey-mustard dressing
-
1 tbsp extra virgin olive oil
-
2 tsp UMF™ mānuka honey
-
2 tsp Dijon mustard
-
2 tsp apple cider vinegar
-
Pinch of salt and black pepper
Method
1. Cook the chicken
Slice the chicken breast in half horizontally to create two thinner fillets. Season both sides with salt and pepper.
Heat 1 tsp olive oil in a frying pan over medium heat. Add the chicken and cook for approximately 3 minutes per side, or until golden and cooked through. Check that the thickest part reaches an internal temperature of 75°C.
Transfer the chicken to a plate and leave to rest briefly before slicing into strips.
2. Make the mānuka honey-mustard dressing
In a large bowl, whisk together the olive oil, UMF™ mānuka honey, Dijon mustard, apple cider vinegar, salt and pepper until smooth and well combined.
3. Prepare the salad
Core the apple and slice it thinly. Add the rocket, shredded red cabbage and apple to the bowl with the dressing.
Toss everything together until the salad is evenly coated in the mānuka honey-mustard dressing.
4. Assemble the wraps
Warm the wholegrain wraps in the microwave for approximately 15 seconds, or until soft and easy to fold.
Place two slices of cheddar cheese across the lower-middle section of each wrap. Divide the dressed salad and sliced chicken evenly between the wraps.
Fold the sides inward, bring the bottom edge up and over the filling, then tuck and roll tightly to enclose. Place each wrap seam-side down and slice in half to serve.
Tips for the best chicken wraps
-
Make ahead: Prepare the honey-mustard dressing in advance and refrigerate until needed.
-
Keep the wraps fresh: For the best texture, assemble just before serving. If preparing ahead, store the dressing, salad and chicken separately.
-
Add extra crunch: Use a crisp apple and finely shredded red cabbage for a refreshing contrast to the tender chicken and creamy cheddar.
UMF™ mānuka honey serving: Each wrap provides a 1 tsp serving of UMF™ mānuka honey.
